1/3 Cup Hearty Red Wine
1/4 Cup Japanese Soy Sauce
2 Tablespoons Red Wine Vinegar
2 Tablespoons Pure Maple Syrup
1 1/2 Tablespoons Tomato Paste
1 1/2 Teaspoons Ground Ginger
1 1/2 Teaspoons Dry Mustard
5 Garlic Cloves, Minced
1 1/2 Teaspoons Hot Red Pepper Sauce
1/4 Cup Hearty Red Wine

Cooking Directions:
First, mix the olive oil with the lemon juice. Place the chicken in the roasting pan with the chopped onion tucked among them. Season with a little salt and fresh ground pepper. Brush the chicken pieces with the oil and lemon mix. Preheat the oven to 400 Place the pan on a high rack of the oven and let it cook for 25 minutes. While the chicken is cooking, whisk all of the sauce Ingredients together in a mixing bowl. When chicken is done remove from the oven, pour off any fat that's in the pan, and the pour the sauce we just mixed all over the chicken and onions, a generous coating. Place back in the oven for another 25 minutes. Make sure you baste the wings at least twice while cooking the second time. After that 25 minutes remove from oven and place on stove top on medium heat. Pour in your 1/4 cup red wine, stir it into the sauce, let it just bubble for 1 minute or so. Spoon the sauce over the chicken and serve hot.
